Watch face changes to old deled watch face.

I recently upgraded my Apple Watch from version 4 to 7. I set the new watch up using a modular watchface. The old Apple Watch used Infograph Modular.

I disabled auto switching on watches, and even deleted Infograph Modular watchface from my Apple Watch 7.

Somehow the modular watchface disappears and Infograph Modular reappears in the watchface. I have done this delete/add about 10 times yet it still re-occurs.

I have let the old iPhone battery go dead just in case auto switch is stuck on somehow. Today I deleted the old v4 Watch completely.

Now thinking it may be related to back-ups and is somehow being brought back from a back-up… So just did the watchface change again, and a back-up immediately thereafter.

Any other ideas ? Or could this be a bug…
