Signing out of Apple ID on iPad & erasing all data/restoring to factory settings

I am trying to sign out of my Apple ID on my iPad 6th gen but it keeps asking for an old password and when I click through to change password it asks me to enter an old trusted mobile number. I have tried to reset & erase all data but it just stays signed in. Please advise how I can sign out & restore to factory settings as I am recycling it

You will need your Apple ID Password to reset your device. This is used to shut off Find My. These are the options to reset your Password, then you can reset your device:

If you forgot your Apple ID password - Apple Support
