Apple watch cellular feature in Jordan
does the cellular feature of apple watch really work in jordan, like can i use an E-sim and just link it with my watch and then i get this feature?

You are correct, the North America model uses radio frequencies which are not compatible with the Jordanian networks. It will never connect to cellular in Jordan, the internal hardware is different.
If Jordanian cellular networks decide in the future to provide service for Apple Watch the correct model would be the same as used in neighbouring countries like Kuwait, Bahrain, UAE. For the current (Series 8) models that would be A2773. It is likely a similar model variant will also exist for future versions (Apple Watch Series 9?) because there is not enough space inside the watch to provide duplicated hardware to cover all cellular regions.
