Based on my knowledge, there are no specific settings on your iPhone that would cause Location sharing to turn off with one person in your family when switching from WiFi to 5G. Location sharing settings are generally applied universally to all individuals you choose to share your location with, and they are not affected by network changes from WiFi to 5G.
If none of the above steps resolve the issue, it is recommended to reach out to Apple Support or visit an authorized service center for further assistance. They can provide specific guidance based on your device model and iOS version.
