Presumably you are using the native iOS/iPadOS/macOS Mail App. If so, you’ll not have facility to set an Out of Office message.
To set and use Out-of Office messages, your Mail Provider will need to use an Enterprise Mail Server (e.g., Microsoft Exchange) - and you will also need to use an appropriate Mail Client (e.g., Microsoft Outlook).
