It seems that to say only “Siri” do not work on Danish?
When to select “Siri and search” the only option I have is listen “Hey Siri”:when language is Danish ?

If you re asking about just saying "Siri" instead of "Hey Siri" that option is not yet available. It is on of the new features planned for iPadOS 17 which has not been released yet. It is coming this Fall. See: iPadOS 17 Preview - Apple
