There are a couple of factors to consider:

(in the screenshot above, Music is currently selected)
To recap, if the tracks are listed in your Library under Music, but you look on the iPod under Audiobooks, you will not see them.
There are advantages to having Audiobooks set as media kind is Audiobook, (such as Remember playback position and Skip when shuffling are automatically set to "on", saving you the job of setting those options), so you may feel that it is worth the effort of changing the tracks to audiobook.
To change the media kind from Music to Audiobook:
Once you make these changes, you will need to Sync the iPod with your iTunes Library in order for the changes to take effect on the iPod.
Note that if you use Manually Manage for the iPod, you will have to remove the old tracks from your iPod and then copy the revised versions onto it.
