so I have this Apple Watch series 8 and I was wondering if it’s possible to switch it with an Apple Watch 8 with cellular data

no, they don't do trade in for current models

Apple Trade In - Apple

but if some countries if you purchased it within a 14 days timeframe you can return it full refund no question asked and purchase whatever new product you wish
