Apple doesn’t provide an automated option for cards being used for just one purpose. Any funds deposited into your Apple Account will be used first and that includes your gift cards. What you want is almost imposible to do.

I use an Apple Card to purchase game items. I don’t want my chase card to be used except for cloud upgrade. That is all I have authorized for that card. I’ve also noticed that both cards were used for same things so charged twice.
