The iOS app privacy report shows several iOS apps that access my contacts, and there appears to be no way to prevent them from doing so:
App Store
Wallet
Health
Before making any recommendations please test it for yourself.

You can’t if you want to use the app store, wallet or health. All of those apps need your contacts for the basic functions of the apps. These are all your apps, so you are only sharing contact information with yourself. None of the contact information leaves your phone.
Please do the best you can to show me where I can verify what you wrote.
