Apple One selective sharing
Have Apple One but only wish to share the TV subscription. Is that possible? I do not want my music or icloud getting messed up by family members!

Even with a shared subscription to Apple Music (which you might not have) your iCloud Music Library and other iCloud data remain separate. If you share an iCloud subscription you're sharing the capacity, not the data. The only other choice is whether or not to share purchases. See How to share purchases with your family - Apple Support. You can choose to share subscriptions only and not purchases and payment methods if that works best for you. You cannot choose which eligible subscriptions are shared.
