My son and I are on a family share plan, but he is now ready to marry and start a family. I want to remove myself from the plan but I don’t want to lose my subscriptions. How to I start my own apple care plan?

See Leave Family Sharing - Apple Support. If it is just the two of you then you'll likely need to disband the group. You can resubscribe for any services that he'd taken out that you wish to continue.
