The Apple weather App can hold more than one location, including a dynamically calculated location based on your GPS position.
The "My Location" entry in the list will always reflect the dynamically calculated one.
To add new fixed ocations or remove existing ones, tap on the menu icon at the top left corner, then use the search field at the top to find the new location, and then tap on Add to add it to the list of locations.
