I removed my number from iMessage and my phone seems to not recognize my number. In the “my number” setting, no number is displayed and therefore in iMessage only my Apple ID is recognized rather than both my Apple ID and phone number.

Have you logged out of iMessage completely? If you have other devices using iMessage with the same Apple ID, log out on them, too. And, log out of Facetime. Restart the phone and then try activating iMessage again.
Try restarting your device and wait for the iMessage prompt and set up your phone number for iMessage
Perhaps it's time to contact Apple. You can use the Support link at the bottom left of every page of these forums.
