Currently, your Apple Watch should always have the same time as your iPhone. I say “currently” because there are issues and Apple may change the way this works in the future. I will add another post after testing, (I always test the behavior after every watchOS/iOS update to find out if a known issue has been fixed.) In recent versions, the time zone is only in sync with the iPhone while connected to it. Otherwise, it reverts to whatever it thinks is the correct time zone. My testing will verify the current behavior.

Regardless, the place where you set the time on an iPhone running iOS version 16.6 is: Settings>General>Date & Time

Testing complete: It seems to work the same way as recent versions… So, with iOS 16.6 and watchOS 9.6.1, when your iPhone is shut off or otherwise completely disconnected from your watch. The watch will switch to what it considers the local time zone.

However, I did just test and realize that only the time zone changes, and not the time. Meaning, if you set your iPhone manually to the local time zone, (the same time zone that is shown automatically) and then set the time according to what ever time you want shown, in my case, the ship’s time, when on a cruise, your watch will show ship’s time when ashore regardless of the local time. This testing shows the behavior of the Apple Watch is even more strange than I realized. But for people on cruise ship’s where it is imperative that you stay on “ship’s time” this can be an effective work-around. Still the best work-around to stay on ship’s time, is not wearing an Apple Watch while on a cruise ship or while in port.
