My settings for my camera or pictures was accidentally changed by my granddaughter. So all my pictures that I’ve already taken look like they’re over expose.

We can help you with taking pictures.
Normally, your camera settings don't stay saved unless you've enabled that function.
You can change it so that camera settings go back to their default after each time the camera app is closed:
Save camera settings on iPhone
With the steps above, you'll go to Settings > Camera > Preserve Settings and make sure these settings are turned off so that they're not preserved.
You can close the camera app and restart after that:
Close an app on your iPhone or iPod touch
