If your watch doesn’t have the most current version of WatchOS and you want to update it and it supports the newest version, then you go into the Watch app on your iPhone. Once in their Select General > Software Update and if there is an update available you’ll see it in there. You’ll be able to select “Download & Install” to install it on your watch.
Make sure your watch is charged to at least 50% and on the charger for the update to install. Make sure your watch stays on the charger during the entire update.
If your watch doesn’t support the newest version of WatchOS, then it is going to show that it is up to date with the version that is highest that it does support.
