Proper iOS for iMac Mac (21.5-inch, Late 2012)

Below are the specs for my iMac. How can I determine which iOS I should be using?

Processor: 2.7 GHz Quad-Core Intel Core i5

Memory: 8 GB 1600 MHz DDR3

Graphics: NVIDIA GeForce GT 640M 512 MB

Some vendors released 64-bit versions of their 32-bit apps. E.g., Microsoft (Office), or Adobe (Photoshop). Some of the updates were available for free (inside or outside of the App Store); others, for a charge.


Since Catalina is no longer one of the most recent three versions of macOS, some vendors who once offered Catalina-compatible versions of their apps may have discontinued those versions.
