In order to keep multiple backups, you have to use the Archive function. Connect your iPhone to your Mac. Open a Finder window. Select your iPhone in the sidebar. Click Manage Backups. Control-click the existing (current) backup and select Archive. Next time you Backup a new backup will be created; it will not overwrite the existing (now Archived) backup. Over time, you can archive as many backups as you desire.
Restoring from an Archived backup is the same as any other restore.
Note that archiving a backup does not reduce the amount of disk space it takes up. (e.g. if you archive a 60GB backup and then do a new backup of 60GB you will be using 120GB disk space.)
As an alternative, iMazing can do incremental backups of your iPhone, thereby saving significant disk space. And it has a lot more functionality than Finder for managing your iOS devices.

Automatic backups to iTunes overwrite the previous backup with the current backup.
Is there any way to let it keep older backups?
