Backing up a Mac to an External Drive:
Using Time Machine is the way to go about this. When using Time Machine Backup, you need to first format this hard drive to APFS format in Disk Utility. Then, perform the backups. I always back up manually --particulalry w\prior to installing an update. You should consider doing the same.
How to Format:
Format the Drive in Recovery Mode: Hold down: [command + R] > Select: Disk Utility > Format: the drive to APFS

What follows in only a personal opinion, so " one size does not fit all "
Manual is good if the user is prudent in making backups on a regular and consistent basis
Otherwise, changes of personal data files could be left unprotected from mistakes in the changes to those files
Then it would be more difficult to trace back to older versions
Personally use two different Methods to protect my non replaceable Data files
Each to Separate and Dedicated External Drives
Much like previous suggestion - manually set, but am religious ( if I may use that term ) on doing a Manual Backup at Start of Day on one drive and at Days End on the Other Drive
This way, I have the Present Days Chances captured
Maybe a little over kill but work for me
