I'm challenging a charge and the merchant is requiring the full number (well, the first 6 and last 4) of the number Apple Pay has generated in lieu of my actual card number. Where do I find those details? When I look in Apple Wallet, it shows the last 4 but not the others.

That’s all that you’re required to show. You may need to talk to the store manager, because the Apple Pay terms and conditions are specific on this. Apple Pay number is encrypted and only your bank has the key that can decode the encryption. Banks will not give you that number.

For an ApplePay transaction, the merchant gets the last-4 of the DeviceID.
PERIOD.
The rest remains “hidden behind the curtain.”
If he balks, fine … dispute the transaction w/ your credit card issuer.
You probably just got a customer support rep following procedures. Just call and ask for a supervisor or as Chattanoogan suggests, dispute with the credit card company. A supervisor would be familiar with the process and it shouldn’t be an issue.
Thanks - TBH that's what I thought, I was surprised the merchant (Uber actually) would request anything else.
