My sleep stages (light, REM, deep, etc) do not show in apple health even though I wear and Apple Watch. Only sleep durations is recorded. How do I ensure my sleep stages are tracked?

Unpair and re-pair the watch.

Have you updated your Apple Watch to WatchOS 9? I believe that is required for (Light, Rem, Deep) to be tracked.
