Even with wifi and bluetooth off and in airplane mode, my phone discharges to zero overnight in 6-7 hours. The app says the battery is at 100% capacity.

Go to Settings > Battery > Battery Usage by App. This will show you which apps are consuming the most battery power. If you see an app using a significant amount of battery in the background, consider force quitting or uninstalling it.
During the midnight to 3am period during which the battery discharged >25%, the battery page says no app information is available. See screen shots below.

Yeah, well, not too many Genius Bars in the Eastern Caribbean where I live. Closest one is Miami, about 1,400 miles from here....
So a couple of days ago I updated all the apps (like 60!), and then updated iOS to the latest. And - magic! The battery problem has disappeared!! I'm guessing it was the iOS patch that did it.......
More likely the required restart that is part of the iOS update process did it.
Don't think so, I had previously restarted it without changing the behavior
