Greyed out passcode option???

Hi,

I have just bought a new apple watch SE, it asked me when setting up what passcode I wanted and I put one in. Now I’m never asked for my passcode, even when it’s been of my wrist for a while?? I tried to change this in settings but all of the options are greyed out, please help as I cannot find any other solutions. I have also tried resetting!!
