I don’t want health app accessing my messages
I don’t use the health app at all and it causes me a lot of stress recording information from my messages app. I don’t want this at all

Perhaps none of your providers are set up to use that either.
I've never set those to run in my iPhone; since there's curious
questions I'd have about it, and what info this gives away?

Online and use of devices are two things against this idea; while
none of my providers actually said they'd use it (but how, if so?)
Also, the Emergency Call app still requires one to dial 9.1.1 since
that does not work in my area anyway. Among others, it's in-op.
And found here in AK, there are no reliable healthcare providers.
A cautionary, I did look into the iOS apps ~ I've not set them up.
And as for 'shopping' apps, I go in person; & pay by card or cash.
[During initial pandemic & afterward, some places should urge
use of quality masks, and more often; for older persons at risk.]
