I have added my credit card (for emergency situations) to my childs apple wallet. However - I would like to get notifications for if/when he is using it onto my phone.
How do I do that?

you can't get notifications from wallet, but if your bank suport this you can get push notifications from your bank app.

Actually you can. You can setup an automation on your child's iPhone through shortcuts.
the automation can be triggered when a transaction is done in wallet and you can do whatever you want like send SMS or anything shortcuts can do
