I am unable to log into my Consumer Cellular account using Safari on my Mac. CC customer service advises to clear all cookies and cache. When I do I can then log in. I do not want have to do that for obvious reasons. CC insists it is a Safari issue?

Have you tried a different browser? FireFox and Brave are the ones I seem to see recommended most.
I clear all cookies every time I shut down a browser. I'm more interest in security and privacy than convenience.
I have not tried another as Safari has worked everywhere else for years. I can log in on my iPhone however. I still think this is a CC issue.
What macOS version is on your iMac?
Your version of Safari—supported or not— is tied to your macOS version. If you are behind on updates, you may have an older version of Safari. Safari version for Mojave 10.14 and older and older are beginning to be ignored by some web developers.
If you are unable to log into a website, clearing Safari's history and stored data is a good place to start. To do that, please refer to Clear your browsing history in Safari on Mac - Apple Support and Manage cookies and website data in Safari on Mac - Apple Support respectively.
I do not want have to do that for obvious reasons.
I guess you will have to explain those obvious reasons. I occasionally clear selected cookies and website data or browsing history; sometimes only the last hour's worth of history can prove beneficial for some poorly designed websites.
I guess I am just lazy as when I clear data I then have to sigh back in to numerous sites with passwords etc.
That does however allow entry into CC. They are the only site I have had this issue for what that's worth.
I am running the latest Safari version.

Give this a try: boot into Safe Mode according to How to use safe mode on your Mac and test to see if the problem persists. Reboot normally and test again.
NOTE 1: Safe Mode boot can take up to 3 - 5 minutes as it's doing the following:
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
NOTE 2: if you have a wireless keyboard with rechargeable batteries connect it with its charging cable before booting into Safe Mode. This makes it act as a wired keyboard as will insure a successful boot into Safe Mode.
