It can, but be sure to read the 'Things you should know' section in:

Track your AFib History with Apple Watch - Apple Support

and:

Heart Health - Apple Support

Also note that Apple Watch is not a medical device. Apple Watch only checks for signs of atrial fibrillation periodically. AFib History may not find every instance of your irregular rhythm.
