How to select a preferred payment method on my Apple ID?
If I have two credit cards in my apple payment profile, how do I know which one is “default“ because there’s no notice of this?

If you're talking about your Apple ID payment methods see If you need to change or update your Apple ID payment method - Apple Support. On iPhone, you should see a triple bar ≡ next to each payment method, and be able to reorder your payment methods.
