With recent changes, I see that when I send an email A LOT of information goes to the recipient…everything I have on the contacts card (which might be notes about the person) plus as the sender my phone number and alternate emails go. How do I stop this?

The information you are viewing comes from your own contact information and does not send to the receiver. This is for quick access to contact information from within the Mail app.
