If history repeats, Apple opens Pre-Orders for the new phone, on the Friday after the event where the phones are announced. Usually, you can specify picking up the phone in-store on release day or have the phone shipped to your home. If you don't pre-order, you can take your chances of just walking into an Apple Store that day, but your chances of walking out with a brand new model is very slim. Apple Stores are very crowded on Launch Day. You will likely find yourself relegated to a long line of people hoping to get a new phone, who didn't pre-order and there is absolutely no guarantee that you'll get a phone after waiting what could be hours in line.

If that sounds like fun, knock yourself out. I'll pre-order my new phone and be assured of getting one.

Ps: If what I wrote didn't dissuade you from thinking you'll have great success just going to your Apple Store on Launch Day and you still want to give it a go, get to your Apple Store hours before it opens. Often Apple Stores have some limited stock available for walk in customers (there's no guarantee your store will, however) and they are offered on a first come, firsts serve basis (again, if your store has any to begin with).
