Reset appletv 4K with remote controll

I can't enter the menu because the appletv is in conference mode.

It's solved. It disappeared from MDM, but this was the solution:

Press and hold "Home + Menu" for 5 seconds or until ATV reboots
Once booted back up, repeat the reboot process 5 times or until it enters "Recovery Mode"
From there you can choose to "Reset all settings"

Apple TV should exit Conference Room Display mode, when using the Menu or Back button on the remote. This could ask for a PIN number, if locked through Restrictions. This could alternatively be locked through a device profile, if deployed in Enterprise environments (then only the deployment manager can remove that profile).
