on iPhone 14pro can I store 3 sim numbers and toggle between them
I have an iPhone 14 pro. i would like to be able to use 3 eSim plans/number while traveling in Europe.

You can store up to 8 eSims on your iPhone 14, but you can only have 2 active wt any given time. So you will have to go into your settings and deactivate one and activate another if you plan on using more than 2 at a time. It’s very simple to do and takes no time at all.
while it is an extra step think of it this way, it’s better than carrying around 3 phones and iPhone is way ahead of the game compared to android.
I use dual eSIM on my iPhone 15 pro max, I have T-Mobile and Verizon, 2 different carriers, 2 different plans, 2 different numbers and when I go to Europe I use a 3rd, I just deactivate Verizon. It works seamlessly.
