How do I reverse forget this device
I chose forget this device for my watch. Now I want to pair it again. How do I do that without erasing all my network settings?

Are you trying to get a WiFi network set back up on your watch? If so, you can go to your control center on your watch and press and hold on the WiFi symbol and pick the WiFi network you want to connect to and set it back up. If your trying to get your WiFi to remember your watch again, all you need to do is let your watch reconnect to the WiFi and it should set back up.
If you are trying Bluetooth, it’s pretty much the same steps except making sure that device that you are trying to connect to is in Bluetooth paring mode and that you go into the Bluetooth settings and selecting the device you want to connect to.
