I like to keep my financial apps spread out on my phone and somewhat buried within folders so that if somebody steals my phone they can’t immediately find all my accounts. But app library renders that pointless as it “conveniently” and quite visibly groups all my bank, credit card, and payment apps together in a folder marked “Finance” that any thief can go directly to.

You do have the option of hiding pages on your Home Screen. Here's how:
"Find, hide, and remove pages on your Home Screen
With iOS 14 and later, you can hide pages to streamline how your Home Screen looks and add them back whenever you want. Here's how to hide a page:
To unhide a page, repeat the steps above. Then use the App Library to quickly find apps hidden on different pages.
To remove pages from your Home Screen:
, then tap Remove. When you remove a page from your Home Screen, the apps will still appear in the App Library."
