The iPhone 6 or 6 Plus – note, no 's' – can run the latest version of iOS 12, but no higher. If you are asking how to update an iPhone 6 or 6 Plus to iOS 15.7.9 "so that [you] can download any app of [your] choice", you'd be asking something different than what the OP did. In that event, the answer would be, "You can't."

Use a computer or the Software Update function in Settings. If you encounter a specific issue, describe it in this thread.
