Have you tried the built-in 'Mortgage Calculator' template? You can find the templates at File > New in your menu.

Excel is a great app on the Mac. You can get it at the Mac App Store.
Also, if you've found an Excel template that you like then you can try opening it in Numbers.
With a little cleanup you may able to turn it into something that works well for your situation.

It's just like a typical mortgage loan. Repayments are monthly with the interest paid each and a portion of the principal is paid each month. At the end of 5 years the entire principal will have been repaid.
I have, but the problem is I don't find it to be flexible. If they pay extra principal in one month or they miss a payment one month, I can't change the amortization to reflect that. At least if it will do that, I'm not seeing it. I'm needing something flexible like excel but on my Mac of course.
What does your personal loan look like? What are the terms?

I have a few that I need to track. One is $20,000 to be paid in 5 years at 6.50% interest
Are interest repayments monthly, quarterly, yearly, one-time at maturity?

How is the interest accrued? Monthly? Daily? Continuous?
Are principal payments at the beginning or end of each period.
