iPhone 15 in-store pickup on 9/22
The Apple site isn’t allowing me to select the “Pickup store” although it shows in-store availability. Any idea why?

If you're trying to order know, it may show an in-store option, but you are way late in trying to order an iPhone for delivery or pickup on the 22nd. The fact you can't choose in-store is because you can't really get one in-store on the 22nd. The best you can likely do is accept the delivery window offered, which is October 17 - October 24. Millions upon Millions of people ordered a new phone when preorders opened yesterday morning at 8:00 AM EST.
I'm honestly surprised you can actually get one in October at this point. Some models are sold out well into November.
