Apple Pay
I do not want to use Apple Pay for my payments. I would like to choose my own method of payment when I purchase something how do I delete it?

Apple Pay does allow you to pick your own method of payment. You can just remove all your cards from Apple Wallet app and then Apple Pay will not have a funding source.
