After watchOS10 my Apple Watch will not pair with my AirPods Pro without leaving wifi

What happens when disconnecting your Apple Watch from your HomePod with the steps in the section below found in the same article?

"Unpair your Bluetooth accessory

1. Tap Settings > Bluetooth on your Apple Watch.
2. Tap  next to your accessory.
3. Tap Forget Device.
