Does anyone know how to print selected cells in a Numbers spreadsheet, rather than printing the entire sheet?

Simply not possible.

If it's a one-shot deal then copy-paste the values in a table on another sheet.

If you're going to print the same area repeatedly insert formulas in that new table to simply follow the original values so it continuously keeps up-to-date. The good news is that you can format it differently than the source material if you want.

Copy the cells. Open Preview and Menu > File > New from Clipboard. Print from there.
