Install BigSur on external from Monterrey startup?

My 2016 MBP is running 12.6.7. But as I have some older software that won't run on OS12, I got an external drive, and I want to install Big Sur on it.

I managed to download the Big Sur installer (Apple does not make this easy). It's in /Applications. It will not open, as many have pointed out.

So, how do I install macOS Big Sur on an external drive when the boot drive is a later version?

You would need to create a bootable installer of Big Sur, boot your Mac from it, then select the external drive and install.
