How can I change the Wi-Fi frequency on my Mac OS Catalina 10.15.7?

Wi-Fi frequency is an inherent characteristic of your router. All you Mac does is use the signal the router emits.
You can't change the frequency at all unless you redesign the router and then you probably need FCC approval (or its equivalent depending on country) and all that gunment red tape stuff about acceptable interference and all.
In Settings (Preferences)/Network, you can choose the network you want to connect to; networks you've created. Generally that's either a 5GHz (not 5G) or 2.4 GHz. But to get either, you have to tell your router to generate them ...if it's capable of generating both. That's done via the router's GUI or whatever access it allows for.
In my router my 5GHz signal is called by a specific name so I can know it when I see it. I gave it that unique name. Same for the 2.4 GHz signal.
