I am not an expert, but I recently read in the community forums that having your device attached to a charger will foster a consistent update. The implication in the suggestion I read was that wi-fi and cellular will be disrupted without it. While I don't know if that is true, it might advance your update.

It's good practice to keep it plugged in. Having the phone run out of charge in the middle of an update being installed can cause issues. I'm not sure that it makes much difference with the WiFi or cellular. But yes, a good idea.
Can you tell us what the speed of your Wi-Fi Internet connection might be on your home network!
About how far is your iPhone located from the Wi-Fi router?
Not sure? Type www.speedtest.net and run a few checks. Post back with your results.
