I plan to go to San Diego CA from October 6th to 10th, and I have doubts about finding the iPhone 15 Pro Max available in stores without a pre-order. What do you recommend I do to ensure getting it in-store on that dates?

Pre-Order it online, and select Pick up in Store if available for stores in the area you will be in, it will then tell you what dates it may be available for pickup if at all possible.
Outside of that, you will just need to walk into the store and see if any are available.
No other magic way of guaranteeing one.

I don't think you can ensure you'll get one. It's my understanding that delivery dates for online orders for that model have slipped until November.
I suggest you place an online order and have it shipped to your home.
