My phone is stuck in SOS mode how do I get it out?

You don't. SOS mode happens when your iPhone cannot connect to your network or service plan, or simply cannot get a signal from your service provider at all, but can still connect to another carrier's tower or network to place emergency calls.
If you are in an area where you know there's signal, contact your mobile service provider and have them look inbto your service plan. There may be an issue.
You can't just turn off SOS mode, its an issue with the connection, not your device.
