Trackpad pinch-to-zoom stops working repeatedly

I know Apple knows this is a common and known issue, and it has to get fixed. I've been using Mac for forever at this point, and I've had this issue across 3 MBPs and countless OS.

You're trucking along, doing your work, everything is smooth—then all of a sudden the trackpad's pinch-to-zoom stops working. Yes, it's an easy fix to go into System Preferences > Trackpad > and un-checking & re-checking the 'Zoom in or out' once or a couple of times. However... It's incredibly disruptive for workflow when it continuously happens during the same session.

My computer is freshly restarted, less than 5 years old, the OS is up to date, and I don't run more than 3-5 applications at the same time. (A couple of these apps are powerheavy, like Chrome—but I don't use more than 2 windows, and less than 5 tabs open at any given time. And pairing that with one Adobe app really shouldn't be too much for my very powerful, very expensive, computer to handle.)

I've contacted Apple about this issue before, and none of your solutions are working. I also feel as though I shouldn't have to have a minor in IT to be able to have this issue permanently resolved. No more bandaid fixes, please!
