Short of taking your Apple Watch to and Apple Store and having them send it back to Apple, you do not.

It is best to do some Google searches for "Apple Watch UI changes" then read the articles and watch the YouTube videos.

Because even if you downgrade to watchOS 9, you will eventually have to either upgrade, or find that you iPhone is prevented from upgrading as well. This leaves you open to security holes.

I am so disappointed and frustrated with the UI changes that I would very much rather be without the device for a few weeks while it is repaired (returned to OS 9) then continue to fight with the device to perform basic tasks. As an example, it currently takes me twice as many steps to start a workout.

I view the changes as akin to swapping the gas and brake peddles in a car. Of course you could do so.., but doing so would requires all users to relearn an entirely new way of working all while provide no meaning full difference in usability. Watch OS 10 does exactly that by expected users to re-learn their devices all while providing no meaningful value.
