The iPhone 8 cannot update to iOS 17, but it can update to iOS 16.
To do that, go to settings>general>software update and make sure to connect to a wifi network and that low power mode is turned off.
If you cannot update wirelessly please update via a pc or Mac instead

On a Mac with macOS Catalina or higher, you will use the finder in order to upgrade your iPhone. Make sure to Back up your device before starting the upgrade process.
On a Mac with macOS Catalina or later, you will follow the following steps:

An iPhone 8 or iPhone X isn't capable of 17 or above; they require an A12 or better CPU. To install 16.7, use a computer or the Software Update function in Settings.

You have to go to Settings > General > Software Update. But you can not do this with the IOS 17 beucase you need an A12 chip, but you can update to IOS 16.7, or you can upgrade your iPhone to an better iPhone like the iPhone SE, ETC.

true, iphone8 can only get to 16.7.4
and after spending an hour on the phone with support, they tried everything they could and my iPhone 8 now cannot sync with my iTunes on my iMac
it was a VERY BAD IDEA to update my iPhone8, as I can no longer sync my contacts and calendar on my iMac
I will be required to buy a new Desktop computer if I ever want to use iTunes again, to sync my iPhone8
I really wish I had not updated my iPhone.. BAD BAD BAD idea
