I have a gift card and I can see it on my account. However, when I got to checkout, I don't get the option of using the Apple Gift Card to purchase the phone. It only allows me to use a credit card or split between two credit cards.
I ended up getting helped by a representative. She told me to remove Apple Card from my shopping cart. For some reason if you put Apple Care in the shopping cart along with the phone and try to pay by Apple Pay and use an Apple Gift Card balance, the Gift Card won't show up. Once I removed Apple Care, the gift card balance show up in the cart and I was able to use the gift card. I'll just purchase Apple Care back when I get the phone.

Please contact Apple Store sales support via phone by calling 1-800-MY-APPLE. They’ll be able to assist with Apple Gift Cards.
Thank you for replying with the added details about Apple Care purchase. You’ll have 60 days to purchase Apple Card and you can purchase it directly for iPhone Settings app. It even counts down the days remaining to complete the purchase.
I called that number and the option was not there for the sales associate either. She didn’t know why it wasn’t there, but she had no option to enter a gift card.
